This knowledge, built up in the field, sits alongside everything the company already knows: purchase history, order frequency, quantities, commercial terms, payments, promotions, categories purchased and products that are no longer being ordered.<br \/>\nThe problem is that this information often remains fragmented.<br \/>\nSome of it stays in the salesperson\u2019s experience, while the rest is spread across customer records, documents, order history and administrative data.<br \/>\nBefore a visit, building a complete picture can therefore take time and require switching between different sources. For sales management, this means having a wealth of customer information without always being able to turn it into knowledge that the sales team can use straight away.<\/p>\n<h2>Purchase history can reveal more than it seems<\/h2>\n<p>Knowing how much a customer buys is useful, but understanding how their buying habits are changing is even more valuable.<br \/>\nA product that used to be ordered regularly and then disappears deserves attention. The same applies to a category that has never been purchased, a drop in ordering frequency or a significant change in volumes.<br \/>\nThese signals can help the sales representative understand what is worth exploring during the next visit.<br \/>\nCustomer knowledge comes from the ability to connect these signals, rather than allowing them to remain scattered across systems, documents and individual memory.<\/p>\n<h2>Before a customer visit, the right information matters<\/h2>\n<p>A salesperson preparing to meet a customer rarely needs to review every piece of information available.<\/p>\n<p>What they need is quick access to the right information:<\/p>\n<ul>\n<li>when the last order was placed<\/li>\n<li>which regularly purchased products are no longer being ordered<\/li>\n<li>which categories the customer buys little or nothing from<\/li>\n<li>which commercial terms are currently in place<\/li>\n<li>the customer\u2019s account and payment status<\/li>\n<li>which promotions may be relevant<\/li>\n<\/ul>\n<p>Bringing this information together in a <strong>customer summary<\/strong> means arriving at the meeting with a clear picture already in place, without having to reconstruct it by moving between different screens, reports and sources.<\/p>\n<h2><strong>The role of AI: highlighting what deserves attention <\/strong><\/h2>\n<p>This is where artificial intelligence can be particularly useful: <strong>organising the information<\/strong> already available and turning it into a practical summary.<\/p>\n<p>A <strong>pre-visit brief<\/strong> can highlight changes in purchasing behaviour, untapped categories, the customer\u2019s account and payment status and other signals that may be relevant to the sales conversation.<br \/>\nThe value lies in bringing the right points to the surface: less time spent searching for data, more time to interpret it and decide what to ask the customer.<\/p>\n<p>The salesperson\u2019s experience remains essential. They know the territory, interpret what happens during the visit and understand factors that no order history can capture on its own.<br \/>\nData and AI can give them a more complete starting point.<\/p>\n<h2>From customer knowledge to the next action<\/h2>\n<p>Customer knowledge becomes valuable when it leads to a specific question or action:<\/p>\n<ul>\n<li>a product that has disappeared from recent orders can become something to explore with the customer<\/li>\n<li>a category that has never been purchased can point to an opportunity worth investigating<\/li>\n<li>a promotion that fits the customer\u2019s buying behaviour can be introduced at the right time<\/li>\n<li>a change in ordering frequency can signal the need to understand what is changing<\/li>\n<\/ul>\n<p><strong>Sales recommendations<\/strong> also become more relevant when they are based on the customer\u2019s history and purchasing behaviour. In this way, the proposal is not built by browsing the entire product range indiscriminately, but from what the company already knows about the customer relationship.<\/p>\n<h2>Customer knowledge cannot rely on individual memory alone<\/h2>\n<p>In Food Service, a significant part of the customer relationship is built through people\u2019s experience.<br \/>\nBut when information, observations and historical data remain separate, some of that <strong>knowledge<\/strong> becomes difficult to <strong>share and use<\/strong>.<\/p>\n<p>Connecting orders, frequency, categories, commercial terms, payments and sales activities makes it possible to build a <strong>shared and more accessible record of the relationship with each customer<\/strong>.<\/p>\n<p>This knowledge can support the salesperson before the visit, during the conversation and in the follow-up activities that come afterwards.<br \/>\nIn many cases, the information is already there.
